A child balancing on the back of a chair is a clear message on Ronco Severo’s label: balance is the key for Stefano Novello who is not afraid to challenge himself, risking falling but enjoying the thrill.
And he is certainly enjoying producing these wonderful skin-fermented wines.
Stefano Novello started on his winemaking journey in 1998. In 1968, before him, his father decided to dedicate his life to agriculture restoring the ancient vineyards in Prepotto in Friuli Venezia Giulia. He “built” the terraces that now are the pride of the winery. The soil in that area is called “ponca” or “flysch” and is a highly unusual combination of clay and limestone with layers of crumbly sandstone that gives a crisp mineral flavor to the wines.
Stefano’s wine are natural and organic. He focuses his work in the vineyards, in the cellar he adopts a non-interventionist approach looking for a maximum expression of the grapes: he often leave the whites on the skins for a month or more and uses natural yeasts. All the wines are unfiltered and unfined in hopes of keeping all of their flavor intact at bottling. The wines are rich, complex and structured, they can be drunk early but their strong minerality tends to emerge with age (up to 15-20 years).
In his 8 hectares estate in the Colli Orientali he grows Pinot grigio, Ribolla Gialla, Friulano, Piccolit, Chardonnay, Schioppettino, Merlot and Refosco dal Peduncolo Rosso.
